It’s almost Friday and I know most of us are glad. Working 3 days last week makes working 5 days seem like torture.

Today’s granola bar has oats as its cereal ingredient and is totally delicious!

Ingredients:

2 cups oats (5oomI)

1/2 cup honey

3 teaspoons brown sugar

Handful roasted groundnut

5 tablespoons chocolate vermicelli or chocolate chips (got it from shoprite, lkeja)

2 1/2 tablespoons butter

Method:

Combine your dry ingredients together. Oats, brown sugar,chocolate and crushed peanuts (I used a hand crusher but you can use dry blender, don’t over crush though).

Place bowl of butter in a boiling pot of water and melt.

Add the butter to the oats dry mixture, combine properly. Add 1 teaspoon of vanilla essence to the honey then add to oats .

Line a square baking pan with foil and spray with non-stick cooking spray. You can use parchment paper if you have, I didn’t so I used a foil which means less baking time because foil conducts more heat.

Spread the oats mixture, shouldn’t be higher than half an inch. My pan was too big so I used only half of it but I will advise you use a smaller pan, a bread tin will be just ideal because after baking I noticed the edges and everywhere that touched the edges of the pan were firm while the centre was slightly crumbly still. But storing in the freezer takes care of all that, so no worries.

Bake in the oven for 15-20 mins or until oats turn golden brown. Don’t over bake otherwise the bottom will burn. 15 mins minimum 20 mins maximum.

Remove from oven and allow it cool then cut into bars.

Store in the freezer at all times.
