Good morning!  Even though by the time I’m done sharing this recipe, it will most likely be noon…but good morning all the same 🙂 .


Today features another version of Zobo shared on Monday but it’s thicker and sweeter with bits of fruit in it. The response and love I got from sharing the Zobo syrup was encouraging and I want to thank Clara’s Corner subscribers, SYTYCC members and fellow bloggers who took thier time to like the post on the blog, on Facebook, retweet and also drop a comment, 😀 da’lu.

I already mentioned zobo health benefits in Monday’s post which includes high levels of Vitamin C and blood pressure reduction qualities. I paired the Zobo with pineapple juice each time and in this particular jam recipe there are also bits of fruit in it. Though I used pineapple chunks, you can use strawberries, peaches or even mango bits for variety.  Pineapple just like Zobo contains high amounts of Vitamin C which we all know is great in combating colds and flu so we can call this jam a double packed Vitamin C jam!


The Jam is very similar to the Syrup, differences include fresh pineapple chunks, more sugar and ratio of pineapple juice to Zobo juice which results in a sweet jam, a whole lot sweeter than the syrup.

I got quite a few questions about what to do with the syrup, I have updated the recipe by adding different uses and so I will do the same with this one.

Zobo Jam can be used on;


Sandwiches with peanut butter

As cake topping

Cheese cake topping



And erm….let your imagination take care of the rest 🙂 .

Ingredients : 1 cup

2 cups/500ml fresh pineapple juice

1 cup/250ml zobo juice

1 cup chopped fresh pineapple

1/2 cup sugar

1/2 teaspoon strawberry essence


Method :

The zobo juice is same mixture as that of the syrup after boiling the leaves with ginger and cloves, measure out 1 cup then drink the rest 😀 .

Pour into a pan 1 cup of zobo juice, 2 cups of fresh pineapple juice and 1/2 cup of sugar. Boil for 20 minutes, stir in the chopped pineapple and continue boiling.


Once the juice is thick enough to coat the back of a spoon and it’s boiling in large bubbles turn off the heat, pour into a glass jar and keep cool always.
