Todays is Monday,  Ada’s worst day of the week. She left home by 6:30am, got to work at 8:15am and rushed to prepare for the board meeting at 10am. She didn’t get a chance to eat before the meeting and had to sit through taking notes till 2pm, thank God for that Tantalizers meatpie that was shared at 1pm, meatpie hasn’t tasted so good. She got back to her desk at 2:30pm and had to quickly tidy up minutes of the meeting for her boss who was leaving the office at 4pm for a meeting in Radisson Blu. Her tummy growled viciously and she made a mental note to beg Yemisi to help her order ewa agoyin and fresh catfish stew from the office canteen.

She heard a rap on her door and looked up to see her boss’ outstretched hand “the minutes please, traffic on Ozumba Mbadiwe is terrible I need to leave now” Ada asked for 5 more minutes to print out the document and her boss agreed. At 3:45pm Ada’s boss leaves the office for his meeting and she’s glad she has the rest of the day till 5:30pm to finish up last week’s business and oh! She was going to leave early today since oga sir wouldn’t be returning to the office after the meeting.

Her tummy growls again and she suddenly remembers she didn’t ask Yemisi to order food for her, grabbing her lastest Francine Rivers novel she heads to the canteen for a relaxing much deserved lunch break, eating and reading…life was good! She met the caterers assistant at the entrance to the canteen carrying out coolers, her heart skips a beat, on entering the canteen her hope of eating and relaxing with a good book goes up in smoke, food had finished. “Guess every one was really hungry today,  no hard feelings, God dey” she thinks to herself “I will survive”.

She returns to the office, glad for some Tom Tom sweets her boss serves his visitors,  well she has visitors to attend to- Miss Hunger and Miss Tummy were fighting for her intestines and vital organs, she had to seperate the fight lest Miss Ulcer joined them. She tidied up her table and left the office at 5:20pm, body no be wood.

The traffic was terrible,  Ada got home at 8pm and at this point she’s convinced she has lost a kidney to Miss hunger. She opened her fridge and found all the fresh ingredients she bought from the market on Saturday exactly where she left them, they didn’t cook themselves. She decided the only reasonable dish to eat right now was her favourite hungry man dish, Pasta Delicioso..

The original name for this dish was concoction pasta because I make it when I’m very hungry and have no patience for procedures, I infact break some cooking rules but in a state of hunger emergency like the character above, procedures aren’t important,  all that matters is eating and I know I have just told the story of many Lagosians 🙂 .  Thanks to Nneka of Neker’s Nibs , it has a pretty gourmet name though it takes about 30 minutes to prepare, no elaborate processes but it comes out juicy and delicious, I find myself making it often these days.

It’s good to shop in bulk as much as you can because that’s the only way to get home late and have enough ingredients to make a decent meal. Now let’s save Ada’s life 🙂 .

Ingredients : ( serves 2 )

1/2 pack pasta

1 small pack Peppe Terra or 3-4 tablespoons tomato paste

1/2 tin corned beef

3 pieces turkey wings

1 tablespoon Worcestershire sauce

1 tablespoon garlic ginger mix

1 tablespoon freshly chopped parsley

2 tablespoons freshly chopped chives

3 tablespoons vegetable oil

1 tablespoon chilli flakes

1 double cube Knorr

1 Maggi crayfish cube

Salt to taste

Method :

Set a medium pot on the fire and fill it up with water half way. Add 1/4 teaspoon of salt and 1 teaspoon vegetable oil to the water.

Wash the turkey, in a small pot season with the garlic ginger mix, knorr cubes, Worcestershire sauce and salt. Put the meat on fire and keep adding water as needed until cooked.

Wash the chives and fresh parsley if using and set aside.

Once the water for the pasta boils, add the pasta and let it cook until al dente (cooked but firm) about 10-12 minutes.

While the pasta and meat are boiling, heat the remaining vegetable oil and add the tomato paste. Stir it continuously so it doesn’t burn.

Once the turkey is cooked, pour any remaining stock into the tomato paste and continue frying it. This process shouldn’t take more than 5 minutes, turn off the heat and set aside.

Once the pasta is cooked, drain half the water until 1/2 cup of water is remaining in the pasta.

Add the fried tomato paste, the corned beef, chilli flakes, Maggi crafish cube, cooked turkey into the pasta and return to the fire. Stir well to distribute the tomato paste and corned beef, let it boil for another 8 minutes.

Cut the parsley and chives thinly, add it to the pasta, stir well and turn off the heat.
