So it’s Mundi Thursday and I know most of us are in a sober reflection mood today and will be tomorrow as well.  This recipe was due yesterday but thanks to PHCN and my dear generator packing up, here we are. It’s really frustrating planning anything light related these days because you never know when PHCN will act up.

Anyway back to our delicious recipe today. Frejon which means beans in Portuguese is a Good Friday meal enjoyed by Christians who abstain from meat in order to honour our Lord and Saviour who died for our sins on the cross of calvary.

I ate it first in my Festac Mummys house (don’t ask, all my Mums sisters are named based on location and we call them Mummy as well, having lost their mother early, all six sisters agreed to be a mother to each others kids so we wouldn’t have to go through what they went through….touching huh? Awesome family I’ve got 😀 ) where was I?….Frejon..yes, I ate it one good Friday like that after fasting till 6pm, probably my first time. Just  couldn’t wait for the meal to cook and oh! It was delicious, either that or I was terribly hungry 😀 . I decided to recreate the meal with just 2 extra additions.

Ingredients : ( serves 4 )

2 cups honey beans (Oloyin)

2 coconuts

1 tin Mai ling coconut milk

3 bay leaves * optional

1 teaspoon crushed chillies * optional



Wash skin off beans like you would for moi – moi.  Then soak for 3 hours.


In the meantime break coconut,  flesh it, grate it into tiny pieces.


Boil 1 1/2 litres of water and pour it into the grated coconut and cover for about 30 minutes to allow the milk sip out.


Drain the coconut milk using  seive, set aside.


Once the beans has doubled in size, rinse and put in a pot on medium fire with half the freshly made coconut milk and the bay leaves, cover and allow to boil for at least 2 hours.


Keep adding the fresh coconut milk until beans is completely soft. Add the canned coconut milk  and crushed chillies at this point, the beans will start thickening.


Let it boil until beans starts sticking to the bottom of the pot, take out the bay leaves then using an egg whisk, whisk the beans until it is as smooth as you want it. This whole process took 2 hours.



Serve hot with fresh curry leaf fish stew.
