Santa Claus is coming to town 🙂 …..

I’m so excited Christmas is just around the  corner! Yipee!

Many of us are either on leave or just closed for the year, the next few days will be very busy for most of us who haven’t had time to shop before now.

All these my recipes should have come before now, I apologise, thing is I’ve been shopping all this while just gathering ingredients not realising Christmas was upon us…..and you know the kain harmattan breeze that has been blowing these mornings… 🙂 , can’t blame a sister.

I made brownies for my birthday and promised to share the recipe, no better time than now.

Ingredients : ( makes 15 )

1 cup/ 250ml plain flour

1/2 cup/ 125ml cocoa powder ( super market or baking shop )

1/2 cup margarine / butter

1 cup brown sugar

1/2 cup white sugar

2 eggs

1/2 cup cold water

1 teaspoon baking powder

1/2 teaspoon baking soda ( sodium bicarbonate )



Preheat oven.

Melt butter. Place in the microwave for 1 minute or put butter in a heat proof bowl, place in a pot with some water and boil until butter melts.


In a small bowl, sift together baking soda and cocoa powder, add melted butter to it and mix.


Stir in water, add both sugars mix until 90% of sugar disolves. Whisk in the eggs, one at a time.


In a seperate bowl, sift in the flour and baking powder.  Make a well in the centre and stir in the cocoa mix careful not to over mix, once all the ingredients are incorporated, stop mixing.



Scoop mixture into cupcake liners without filling them.


Bake for 15-20 minutes.
