I was at Surulere Shoprite the other day getting a charger for my Samsung device when I decided to stroll. I found an amazing seasoning in the spice section, something I suspect to be new because I have never seen it before…..Knorr Green Pepper flavour cubes! They come in small packs of 10 for now, the aroma is someyhing else. I used it in this recipe and it will go well with vegetable stir fry, chicken, fish, fried rice, coconut rice and anything that won’t have ogiri, okpei or dadawa in it….my opinion :-).

I also used a particular tomato paste introduced by someone in our bb group called Peppe terra which is the one tomato paste I know that has pepper in it and no sugary taste at all! You will find it in most cold rooms in your area.

So all of these I combined with Pita bread which is more popular with Shawarma to make something easy and quick for the coming holiday holiday.

A crunchy bottom and juicy topping, Enjoy!

Ingredients : Serves 2

4 pita breads (bread section of any major super market)

0.5Kg boneless chicken

1 large orange bell pepper

8 slice mozzarella chese

1 pack Chi terra peppe (tomato paste) – local cold room

2 tablespoons Thai Sriracha sauce (chilli sauce) – Spar(Park n Shop)

1 cooking spoon olive oil

1/2 teaspoon of dry mixed herbs

2 Knorr green pepper flavour cubes

1 tablespoon soy sauce

1 small bulb garlic

1 fresh atarodo

Pinch Rosemary

Pinch thyme

1/4 teaspoon dry Cameroon pepper

1 teaspoon lemon juice

Salt to taste

Method:

Wash and cut chicken into strips and season with last 9 ingredients.  Crush the garlic and pepper in a smooth chopper, mortar or mini hand crusher. Try not to blend.

Marinde for  at least 30 minutes.

Fry with 2 tablespoons of olive oil for 15-18 minutes or until chicken is cooked.

Wash and cut off the head and bottom of the bell pepper neatly so you get perfect strips for the pizza.

Stir fry the pepper strips for 3 minutes in same pan you used for the chicken so it can soak up the flavours.

Double  the pita bread and dip a pastry brush in olive oil and brush generously on it.

Mix 1 terra peppe pack with 2 tablespoons of Sriracha sauce.

Rub generously on each pair of pita bread.

Chop the chicken strips into smaller pieces and place on the tomato paste. Arrange the bell pepper strips as well.

Top with broken pieces of cheese and sprinkled mixed herbs. Finish off by drizzling 1 tablespoon of olive oil over the pizza.

Repeat same process with the second pita bread.

Bake in an electric oven or gas oven for about 20-30 minutes depending on how hot the oven is.

Serve hot!
