I almost didn’t have any post for today…. long story. Against all odds though Clara’s corner is here bringing you something nice and tasty!
Apparently I didn’t repent from being a sweet tooth for too long :-D, but how could I when kids are at home and their summer break is almost over? You might have noticed I skipped sharing a granola recipe last week, I also will this week because I went through my kitchen cabinet and realised I haven’t shared half the recipes I bought ingredients for this summer and its almost over!
This weeks recipe is very common and can be made with eyes closed! As usual I cut down on the amount of sugar used in the recipe but it still tastes good!
Now let’s dive in :-).
Ingredients:
Popcorn
1/2 cup popcorn
1/2 cup butter
Caramel
2 tablespoons brown sugar (You can use white)
4 tablespoons golden syrup (use honey if that’s what’s available)
3 tablespoons butter
1/2 teaspoon baking soda
Method:
In a deep pan melt the butter and add the popcorn. The trick to perfectly made pop corn is to make sure all the popcorn Kernels are covered completely in oil / butter.
Put the corn in the butter before it gets hot then cover with a lid and allow pop.
Once the corn is popped, set aside and start the caramel.
In a deep pan, melt butter, syrup and sugar.
Allow to boil for 5mins without stirring. Once it starts bubbling-
Allow another 2mins, then turn off the heat.
Stir in the half teaspoon baking powder. The caramel mixture will foam but that’s fine.
Start adding the popped corn little by little and stir to cover in caramel.
Continue adding popcorn to the caramel until everything covered!
Allow it set for at least an hour (if you can) by spreading on foil.
For heavier caramel coating, simply double the syrup and sugar quantity
*For extra crunchiness you can bake it for 20mins.
